Zingy Sweetcorn Salad

This simple salad is packed full of vibrant colours and is great as a BBQ side dish. If you have any leftover, stir it through some cooked & cooled rice and chuck in a handful of toasted cashew nuts for a tasty lunchbox.

Ingredients

Sweetcorn (a big heap) – either drain a large tin or leave a pile of frozen out to defrost for a couple of hours
1 Red Pepper – diced to sweetcorn kernel size
1 Courgette – coarsely grated
3-4 Spring Onions – sliced
Cucumber – a good hunk, diced
Coriander Leaves – roughly chopped
Auntie Frog’s Lime & Chilli Dressing
Dried Chilli Flakes – optional

Method

This couldn’t be simpler.

Prepare all your veggies as per the ingredients list above.

Sling everything in a big mixing bowl and drizzle over some Auntie Frog’s Lime & Chilli Dressing. Give it a good stir and scatter over some chilli flakes if you want a bit more zing.

Serve with additional coriander leaves to garnish and some more Auntie Frog’s Lime & Chilli Dressing on the side.
