Vegan Chocolate Mug Brownie

This super easy brownie is just pinged for two minutes in the microwave. No oven required! It’s delicious with any of our jams and conserves, you’ll just have to choose your favourite.

Ingredients

4 tablespoons self-raising flour
2 tablespoons cocoa powder
2 tablespoons caster sugar
1 tablespoon dark chocolate chips
2 tablespoons of your favourite jam or conserve (we used raspberry)
1 tablespoon neutral oil (sunflower, or a light rapeseed)

Method

Whilst most mug cakes are mixed in the mug, we find this one is tricky not to fling everywhere, so mix in a small bowl to save having to clear up mess afterwards.

1. In a small mixing bowl, stir together the flour, cocoa, sugar and chocolate chips.

2. Stir in the jam, oil and 2 tablespoons of cold water. Mix until well combined and you have a soft dough.

3. Pop your dough into a large(ish) coffee mug and ping in the microwave for 2 minutes. If it doesn’t seem done, give it another 10 second burst.

4. Leave to stand for 1 minute before diving in.
