Toffee Apple Popcorn
To celebrate National Popcorn Day, here’s a quick and simple recipe to turn popcorn on its head!
You will need:
- Popcorn kernels (25g per person)
- 1 jar of Scarlett & Mustard Toffee Apple Curd
- 1 large pan (with a lid- essential!)
- 1 baking tray
Heat an oven to 180C and turn your hob on to medium/high heat.
To measure out the popcorn, we like to work on a 25g per person serving (roughly 2 tbsp of kernels).
Heat a pan on a hob with a drizzle of our Extra Virgin Rapeseed Oil and let it get nice and hot.
Pour in your popcorn kernels (be careful that the oil doesn’t spit at you) and jiggle it around so each kernel is covered in oil.
Keep an eye on them, and keep jiggling them so that they don’t burn, all the while keeping them on the heat. They will start popping soon after they turn a golden brown colour, so be patient!
Once the popping starts slow down, remove your pan from the hob, open up a jar of our Toffee Apple Curd, and dollop a few spoonfuls onto the popcorn.
Quickly stir in the curd and ensure every piece is coated.
Transfer the popcorn to a baking tray and place in the oven to crisp up for 3-5 minutes.
Pour the popcorn into a big bowl to share with family and friends!
