1 free range egg
1/2 tbsp baking powder
1 dessertspoon sugar
pinch of salt

Make our basic fluffy pancake mix by putting the flour into a mixing bowl and whisking in an egg, the milk, baking powder, sugar and salt.
Pop some oil a frying pan and bring to a good heat and drop in a spoonful of the mixture, cook for a couple of minutes each side until golden brown. Repeat to use up the batter.
Serve with one of our delicious fruit curds from the Scarlett & Mustard curd range and serve with your favourite fruit and greek yoghurt.
As an extra treat fry some orange segments in brown sugar and butter. Yum Yum!
