Show Stopper Birthday Cake

Ingredients

8oz/225g margarine
8oz/225g caster sugar
4 free range eggs
6oz/170g plain flour
2oz/60g cocoa powder
your favourite Scarlett & Mustard curd
icing of your choice
an avalanche of smarties to decorate

Method

Line a big square tin (roasting ones with sides are good) and preheat the oven to 180°C

For the cake, cream together the marg and caster sugar until very soft. Add 4 eggs gradually so the mixture doesn’t curdle.

Sift in the flour and cocoa powder and fold in gently until well combined. Pour into your prepared tray.

Cook for 35 mins until a skewer inserted into the cake comes out clean. Leave to cool on a rack.

Now the fun can begin!

If you cut the cake into strips then cut the strips into halves and fill them with a curd of your choice it make it extra gooey (Mary Berry would approve).
Use the strips to make out letters or numbers and smoother with icing. Stir a spoonful of curd into your icing (butter, icing sugar and a drop of water).

Definitely don’t even consider the fact that you might have overdone the Smarties, you cannot go crazy enough with this creation!
