Ingredients
a pile of new potatoes big enough to feed four (ours were fresh from the allotment)
2 large red onions
2 plump fennel bulbs
12 fat tasty sausages
Method
Preheat the oven to 180°c.
Cut the potatoes into quarters (or smaller if your potatoes are large) and both the onions and fennel into slim wedges.
Sling the veg into your largest baking tray along with the sausages and mix it all up. You don’t want everything packed in too tightly, so spread across two trays if you need to.
Drizzle The Colonel’s Poppy Seed Dressing all over the tray(s) and bake for 40 minutes.
Serve in large bowls with additional The Colonel’s Poppy Seed Dressing on the side.
