Roasted Vegetable and Pumpkin Seed Salad

Roast butternut squash, sweet potato and pumpkin in the oven (or whatever root veggies are available, parsnips, carrots and beetroot would also work well) . Hot 200oc oven for 45 minutes will do the trick.

Toss in a couple of tablespoons of the pumpkin seed oil, add feta cheese and sprinkle with pumpkin seeds for a truly healthy and delicious dish.

Works well as a lunch or light supper dish or as a BBQ side dish.
