This works well as a lunch, light supper or as a BBQ side dish.
A selection of your favourite root veg and squashes, cut into chunks
Scarlett & Mustard Pumpkin Seed Oil
1. Preheat oven to 200°c.
2. Add butternut squash, sweet potato and pumpkin to a large tray (or whatever root veggies are available, parsnips, carrots and beetroot would also work well), drizzle with olive oil and give it a mix. Roast for 45 minutes or thereabouts.
3. Remove from the oven. Toss in a couple of tablespoons of the Scarlett & Mustard Pumpkin Seed Oil, add feta cheese and sprinkle with pumpkin seeds for a truly healthy and delicious dish.
