2 orange peppers (any other colour will do, but of course, we love orange!)
1/2 a punnet of baby cherry tomatoes
1 large garlic clove, very finely sliced
8 anchovies (optional)
Rosie’s Doo Dah Sauce
fresh basil leaves
sourdough bread to serve
Preheat oven to 150°c.
Halve the peppers and take the seeds out.
Fill the halves with some baby cherry tomatoes and some slithers of fresh garlic – and you can add a couple of anchovies too if you fancy.
Drizzle over some Rosie’s Doo Dah Sauce and roast in the oven for about 45 minutes until crispy around the edges.
Sprinkle with some fresh basil and serve with some sourdough bread, or as a side dish for a BBQ. Yum yum!
