


Ingredients
Fresh salmon fillets
Auntie Frog’s Lime & Chilli Dressing
Local new potatoes
Butter
Frozen peas
A sprig of mint
Method
Preheat oven to 180°c.
Take as many portions of fresh salmon fillet as you have friends and place on a piece of foil on a baking tray.
Add a good dollop of Auntie Frog’s Lime & Chilli Dressing and spread evenly over the salmon fillets. Seal up the foil making a little parcel and bake in the oven for 15 minutes approx.
Boil local new potatoes until tender, drain, allow to steam a little then crush gently and add a little butter, sea salt and freshly ground pepper.
Serve the salmon and potatoes with boiled minted peas, drizzling over a little more of Auntie Frog’s Lime & Chilli Dressing, then tuck in.
