Poached Salmon with Minted Peas
Take as many portions of fresh salmon fillet as you have friends and place on a piece of foil on a baking tray. Add a good dollop of Auntie Frog’s Dressing and spread evenly over the salmon fillets. Seal up the foil making a little parcel and bake in the oven at 180°C for 15 minutes approx.
Boil local new potatoes until tender, drain, allow to steam a little then crush gently and add a little butter, sea salt and freshly ground pepper.
Serve the salmon and potatoes with boiled minted peas, drizzling over a little more of Auntie Frog’s Dressing, then tuck in.
