3 young courgettes
1 bundle of asparagus
80 ml Big Bear’s Honey & Mustard Dressing
30g shaved parmesan or pecorino cheese
Thinly slice some asparagus stalks on the diagonal (1cm is about right!)
Using a vegetable peeler, shave 3 courgettes into long thin strips.
Put into a pretty salad bowl, toss with the Big Bear’s Honey & Mustard Dressing and sprinkle over shaved parmesan.
