3 young courgettes
1 bundle asparagus
80ml Big Bears Dressing
30g shaved Parmesan or Pecorino cheese
Thinly slice some asparagus stalks on the diagonal (1cm is about right!)
Using a vegetable peeler, shave 3 courgettes into long thin strips.
Put into a pretty salad bowl, toss with the Big Bear’s and sprinkle over shaved parmesan.
Couldn’t be simpler! Yum Yum!
