Mother’s Day Pudding
The perfect recipe for a Mother’s Day treat. Very easy and suitable for children of all ages.
You will need: 2 litre tub of vanilla ice cream, a curd of your choice and decorations.
Take the ice cream out of the freezer and leave on the side for 20 minutes until quite soft (perhaps use this thawing time to pick her some daffodils?!)
Open curd and add ¾ of a jar of your favourite curd – we’ve used lime and mint. Swirl into the ice cream with a fork. You can try loads of crazy patterns or you might want to be sensible with a sophisticated ripple effect.
Put back into the freezer to refreeze for at least 15 minutes.
When you’re ready to eat, scoop into bowls and top with a little bit of extra curd and your decorations – we’ve gone for a sprig of mint.
– You can go as mad as you like with decorations! How about….
– Blackcurrant and star anise curd decorated with dolly mixture and some fresh blackcurrants to cut through all that sweetness
– Orange curd decorated with those little orange and lemon sugar sweets.
– A few drops of crème de menthe in the bottom of just Mum’s lime and mint curd pudding!
