This amazing salad makes a main meal when topped with halloumi and with a splodge of tzatziki on the side. For a sophisticated lunch mix through some cooked orzo pasta and king prawns. It’ll keep in the fridge for a few days, so is handy for lunchtime pickings.
Broccoli – 2 heads
Radishes – a bunch
Fresh coriander – a bunch
Fresh mint – a bunch
Pumpkin seeds – 2 handfuls
Auntie Frog’s Lime & Chilli Dressing – about a third of a bottle
Salt & pepper
Cut your broccoli into very small pieces, don’t discard the stalk, peel, quarter and slice this too. Place broccoli in a large bowl.
Finely slice your radishes and roughly chop the herbs and add all of this to the bowl.
Add your pumpkin seeds and the most generous of glugs of Auntie Frog’s Lime & Chilli Dressing (we used about a third of a bottle), then season to taste.
Serve with a dollop of homemade tzatziki on the side and some hunks of fried halloumi on top.
