De constructed Lemon-lime Meringue Pie

Ingredients:

5 Lemon Merangz

1 Jar Lime & Mint Curd

100g  biscuits

50g Unsalted Butter

250ml Freshly whipped cream

Method:

Melt the unsalted butter in a saucepan making sure it doesn’t burn. Then place the Digestive biscuits into a bowl and crush, add the butter once melted and mix thoroughly.

Stir together the whipped cream and curd making a smooth mixture and crush the lemon Merangz in a separate bowl. Place the crushed biscuit mixture onto the serving plates evenly, then serve a dollop of the cream and curd mixture on top, and sprinkling a crushed lemon Merangz over each serving.
