50g unsalted butter
100g digestive biscuits
250ml freshly whipped cream
1 jar of Scarlett & Mustard Lime & Mint Curd
5 lemon Merangz
1. Melt the unsalted butter in a saucepan making sure it doesn’t burn.
2. Place the biscuits into a bowl and crush, add the melted butter and mix thoroughly.
3. In another bowl, stir together the whipped cream and Scarlett & Mustard Lime & Mint Curd making a smooth mixture.
4. Crush the lemon Merangz in a separate bowl. Place the crushed biscuit mixture onto serving plates evenly, then serve a dollop of the cream and curd mixture on top, and sprinkling a crushed lemon Merangz over each serving.
