This is a great dish for using up some leftovers, it uses stale bread which absorbs the sauce beautifully and you can pop in any old scraps of leftover ham and cheese. A fabulously thrifty supper or lunch.

Ingredients
butter
Scarlett & Mustard Chilli Jam
6 thick slices of stale bread
10-12 cherry tomatoes (or sundried tomatoes are nice too)
ham scraps, roughly chopped or torn
500ml milk
3 eggs
leftover cheese hunks and scraps from yesterday’s cheeseboard, grated or crumbled
Method
Heat oven to 160°c, then grease a shallow dish.
Butter the bread slices, getting as close to the edge as you can. Then spread generously with Scarlett & Mustard Chilli Jam.
Cut the bread in half and arrange in the dish. Nestle the tomatoes and ham scraps amongst the bread.
In a bowl, whisk together the eggs and milk and season with salt and pepper. Pour over the bread and push the slices down to get a good soaking. Leave to stand for 5 mins or so.
Scatter cheese over and bake for 30 mins, until golden.
