1/2 onion, chopped
1 garlic clove, crushed
1 chicken breast, chopped
1-2 tbsp za’atar
2 florets of broccoli, chopped (not a whole one, just 2 off a big one!)
Sea salt and black pepper
1 tsp coconut cream
Brown rice spaghetti – as much as you need
2 tbsp natural yoghurt
Place your spaghetti on to cook and melt some coconut oil in a frying pan.
Add the onion, garlic and broccoli and stir on a medium heat for a while. Add a little water and cover with a lid. Leave to simmer so the broccoli begins to soften slightly.
After 5 minutes or so, add the chicken back on a medium heat and the za’atar. Continue to stir, also adding the coconut cream. Take off the heat once the chicken is cooked through. Add the yoghurt and stir through.
Drain the spaghetti and add to the pan. You can stir it all together or keep it separate, it’s completely up to you. Drizzle over the top some Aromatic Basil Rapeseed Infused Oil to finish!
