1 large ripe mango
Cold cooked chicken, diced or shredded (use your leftover roast chicken)
Auntie Frog’s Lime & Chilli Dressing
Mini croustade cups, available in good delis and farm shops
Take the flesh of a ripe sweet mango and chop finely. Lick your fingers, then wash your hands.
Mix the mango with diced cold chicken breast (cooked – use your left-over roast chicken) and 3–4 tablespoons of Auntie Frog’s Lime & Chilli Dressing.
Mix well and serve on mini croustade cups. Yum!
