These pastry swirls are great for packed lunch boxes, pop a batch of these in the freezer and you can grab and go for a spontaneous picnic.
1 packet of ready rolled puff pastry
2 heaped tablespoons of Red Onion Marmalade
1 egg, beaten
100g grated mature cheddar
20g chopped fresh parsley
Preheat your oven to 180°c and line two baking sheets with baking paper.
Unfurl your puff pastry and place it in a landscape orientation in front of you.
Spread the pastry surface evenly with your Red Onion Marmalade, leaving a 2.5cm strip along the top edge bare. Brush the exposed edge with beaten egg.
Sprinkle the cheese and parsley over the top of the Red Onion Marmalade.
Roll the pastry away from you in a tight spiral: like a Swiss roll.
Cut the roll into 4cm wide pieces, you’ll get about 10 pieces. Place cut side up on your baking sheets, leaving plenty of room for spreading. Brush with beaten egg.
Cook for 30 mins until golden brown.
