All-in-one Tray Bake with Rosie’s Doo Dah Sauce

We’ve kept quantities vague here, so scale this up or down depending on how many hungry people you have to feed.

Rosie’s Doo Dah Sauce


Preheat oven to 160°c.

Take a selection of vegetables – root veg particularly good for this one – in fact anything suitable hanging around in your fridge such as courgettes, carrots, marrow, squash, pumpkin, peppers etc. plus a couple of onions.

Peel and quarter the onions, chop the vegetables into large chunks.  Spread the root vegetables evenly on a baking tray, add a few good quality sausages as you need and pour over a generous slug of Rosie’s Doo Dah Sauce

Season and bake for 40 minutes.  Then add in the courgettes, peppers, tomatoes, mix around, add a little more Rosie’s Doo Dah Sauce and bake for a further 45 minutes.

Perfect with a glass of red.  Yum yum!
