All-in-one Tray Bake with Rosie’s Doo Dah Sauce

Take a selection of vegetables – root veg particularly good for this one – in fact anything suitable hanging around in your fridge such as courgettes, carrots, marrow, squash, pumpkin, peppers etc. plus a couple of onions.

Peel and quarter the onions, chop the vegetables into large chunks.  Spread the root vegetables, evenly on a baking tray, add a few good quality sausages as you need and pour over a generous slug of Doo-Dah Sauce.  Season and bake at 160 for 40 minutes.  Then add in the courgettes, peppers, tomatoes, mix around, add a little more Doo-Dah and bake for a further 45 minutes at 160.

Perfect with a glass of red.  Yum yum!
