Tangy, moreish, oil free and great for everyone! A cider vinegar based dressing that Granny inherited from her mother, and, I will pass on to our children. I recommend lashings of it on warm crushed new potatoes, or as a sauce for cold meats or salad. Simply shake like mad and add food!
For an easy chicken salad simply oven cook boneless chicken thighs at 165c for 20-25 minutes, chop up new potatoes into bite size chunks and place in a saucepan, bring to boil then simmer for 10-15 minutes until cooked through. Place bacon rashes in a pan and cook for 10 mins until crispy and chop up. Slice your bread of choice (we recommend sough dough) into small squares and place on a baking tray, drizzle rapeseed or olive oil over the top and toss until coated, sprinkle over a pinch of salt and place in the oven for about 5 minutes until golden.
Add your salad leaves, avocado and cherry tomatoes into a bowl and mix. Slice your chicken thighs into strips and add them as well as your potatoes and bacon. Serve into smaller bowls, top with croutons and finally drizzle over our dressing for a family friendly meal, great for any day!
For a hearty meal, chop up a bag of new potatoes into bitesize chunks and place in a pan. Bring to the boil then simmer until cooked through. Drain your potatoes and allow them to steam so excess moisture is removed. Place in a frying pan spritzed with oil. Using the back of a spatula crush the potatoes and cook until crispy on the outside (turning them over every so often). Place in a serving bowl and coat with our dressing, then enjoy!
