Talking Comfort Food.

And so the January bombarding of our poor brains has begun – it’s not enough that we’re suffering from boring & depressing weather, back to school/work blues, tight belts and red bank balances. It’s all made worse by the frankly ridiculous number of newspaper and magazine articles, social media posts and adverts about healthy eating, healthy recipes, juice diets, detoxing, cleansing, gut health, clean eating, green smoothies, fruit smoothies, winter smoothies, paleo dishes, good food, super foods – I could go on but you might be on the brink of death by boredom.
So here we are with some winter comfort food – good food – simple, easy, yummy and perfectly healthy enough. Job done.
My first recipe is for a truly tasty Fritatta – almost no sugar or fat, no carbs – just eggs and veg.
Half a jar of Scarlett & Mustard Billy’s Champion Chilli Jam
1 tbsp rapeseed oil
3-4 spring onions, peeled and chopped
75g feta cheese, crumbled
1 tbsp chopped fresh coriander, plus some extra sprigs to garnish
Salt and black pepper
Whisk the eggs with a little salt and pepper, then beat in half the jar of Scarlett & Mustard Billy’s Chilli Jam.
Heat the rapeseed oil in a small non-stick frying pan over a low heat. Add the chopped spring onions and spread out, then pour in the egg mixture and leave to cook gently for about 5-7 minutes, or until the edges start to set.
Meanwhile, preheat the grill to high.
Once the edges have started to set, sprinkle over the crumbled feta cheese and chopped coriander, then put the frying pan under the hot grill for 2-3 minutes.
Turn out onto a platter and then serve with an extra dollop of Scarlett & Mustard Billy’s Chilli Jam, sprigs of fresh coriander and some warm crusty bread. Mmmmm!
My second recipe is a Winter Warmer at its very best!
Granny’s Comfort Spud
Take a couple of baking potatoes, rinse under cold water, pat dry, and stab a couple of times. Roll in a little rapeseed oil and some sea salt flakes, and bake in an oven at 180C for about 1 hour, depending on size. Meanwhile, fry some pancetta and spring onions together in a pan until golden brown. For super healthy you can leave out the pancetta if you wish. Cut potatoes in half and scoop out the soft innards. Mix in a bowl with Granny’s Dressing, the pancetta and spring onions, spoon back into the potato skins, grate a little parmesan over the top, and return to the oven for a few minutes. Enjoy in front of your favourite TV viewing. Yum!
Remember, Granny’s Dressing only has 30 calories per 30 mls. For Comfort Spud you’d need 60 mls so comfort combined with sensible!
And my last recipe for this week is Butternut Squash Soup made with our Billy’s Chilli Jam and Pumpkin Oil. I love to sprinkle the soup with another Suffolk favourite of mine – Munchie’s Chilli Seeds to give it a real health kick.
So this January when you are feeling pressured to join the extra healthy eating brigade, remember it doesn’t have to be difficult or time consuming and please, please don’t stop enjoying your food!
